Abernethy Biscuits Recipe

Cooking Time: about 10 minutes You will need:

6 oz. Plain flour 1 level teaspoon.

2 oz. Cornflour caraway seeds or.

1 level teaspoon ground caraway baking powder 1 egg.

3 oz. Butter about 1 tablespoon.

3 oz. Sugar milk.

1 Sift flour, baking powder and cornflour together.

2 Rub in the butter.

Add sugar and caraway seeds.

3 Mix to a firm dough with the beaten egg and milk.

4 Roll out, cut into rounds.

5 Bake in a moderate oven (350‚°F – Gas Mark 4).

Lemon coconut cookies.

Cooking Time: 8-10 minutes You will need: 4 oz. Plain flour 1 teaspoon vanilla pinch salt 4 oz. Butter or margarine 1 oz. Icing sugar essence lemon cream or curd coconut.

3 Stir in flour and mix well.

4 Take one level dessertspoon dough for each cookie and form into a ball, flatten slightly.

5 Place the cookies 1 in. Apart on an ungreased baking tray.

6 Bake in a moderately hot oven (400‚°F – Gas Mark 6) until lightly browned.

7 Cool on a wire tray.

8 Spread lemon cream (see below) or curd on each cookie.

9 Sprinkle with desiccated coconut.

Chocolate orange cookies: Make as above. Top the cookies with orange flavoured glace icing, 85, and sprinkle with grated chocolate. Leave in a cool place until dry.

Almond cookies: Make as above, replacing vanilla with almond essence. Press half a blanched almond in the centre of each cookie before baking.

Favourite cookies: Make as before, replacing vanilla with lemon essence. Coat cookies with thick white glac6 icing (85) and place half a glace cherry in the centre of each. Leave in a cool place to dry.
