Baked Stuffed Haddock Recipe

Cooking Time: 20-25 minutes You will need for 4 servings:

1 fresh haddock

For stuffing:

1 oz. Breadcrumbs.

1 oz. Butter.

1 teaspoon finely chopped parsley.

1 teaspoon grated lemon rind salt and pepper pinch mixed herbs egg or milk to bind a little flour egg and breadcrumbs 1 oz. Butter.

1 Wash and trim the fish but do not remove the head.

2 Make a stuffing by mixing all the ingredients together except for the flour, egg and crumbs and 1 oz.

Butter.

3 Place the stuffing in the fish and secure with thread or a skewer.

4 Rub the fish over with flour, then coat with egg and breadcrumbs.

5 Heat the butter in a baking tin, put in the fish, baste with the hot butter and bake in a moderate oven (350‚°F – Gas Mark 4), basting frequently.

6 Garnish with lemon and parsley and serve with anchovy sauce (21).
