BEAN CURD SCALLION ROLLS

Ingredients:

3 oz. mashed bean curd

2 oz. minced shrimp

1 tsp. sherry

1 tsp. each minced ginger and scallion

A pinch each of salt and Sichuan pepper powder

1 tbsp. sesame oil

2 tbsp. cornstarch

3 egg whites

Minced ham to taste

1 tbsp- flour

2 cups lard

5 oz. scallion

1 tbsp. Sichuan pepper powder roasted with salt To Prepare:

1. Mix bean curd, shrimp, sherry, minced ginger and scallion, Sichuan pepper, salt, sesame oil,

1 tsp. cornstarch, two egg whites and ham.

2. Cut ten white parts of scallion into sections 21/2 inches long and make slits on each section. Stuff the mixture into the scallion, roll in the flour and dip in egg white paste and stir-fry in lard. Place on a platter, sprinkle with Sichuan pepper powder mixed with salt and serve.
