3 oz. Mashed bean curd

2 oz. Minced shrimp.

1 tsp. Each minced ginger and scallion.

A pinch each of salt and Sichuan pepper powder.

1 tbsp. Sesame oil.

2 tbsp. Cornstarch.

3 egg whites.

Minced ham to taste.

1 tbsp- flour.

2 cups lard.

5 oz. Scallion.

1 tbsp. Sichuan pepper powder roasted with salt To Prepare:

1 tsp. Cornstarch, two egg whites and ham.

2. Cut ten white parts of scallion into sections 21/2 inches long and make slits on each section. Stuff the mixture into the scallion, roll in the flour and dip in egg white paste and stir-fry in lard. Place on a platter, sprinkle with Sichuan pepper powder mixed with salt and serve.
