Blackberry dried fruit Spread

2 cups blackberries, washed, drained cup mixed dried fruit, e.g. natural sultanas, natural raisins,

2 dates, grated orange rind

Finely chop the dried fruit, mix the fruit with the blackberries. Place in 1/2 small, deep, microwave-safe dish. Cover.

Microwave on high for 4 minutes

Stir two times during cooking. Gently mash the mixture until it resembles 1/2 spread. Allow to stand for 1/2 further 2 minutes.

Place in 1/2 sterilised jar and refrigerate.

Citrus dried fruit spread

Cup natural sultanas J/i cup cooked apple (no juice)

1/2 cup currants rind of 1 lemon

1 cup lemon juice

Place all the ingredients in 1/2 small, deep, microwave-safe dish. Cover.

Microwave on high for 2 to 3 minutes Stir two times during cooking. Allow to stand for 1/2 further 2 minutes. Process the mixture, with the cutting blade, until pureed. Place in 1/2 sterilised jar in refrigerator.

Makes about 1 cup

H Egg white topping

2 egg whites, yolks discarded pinch cinnamon or

1 teaspoon canned e1/2porated pinch nutmeg or skim milk pinch allspice

Place the egg whites in 1/2 clean dry bowl and beat, with 1/2 beater, until frothy and thick. Add the skim milk and beat further. Place on top of puddings or desserts. Top with the spice of choice.

Microwave on high for 2 minutes This topping may be placed on top of the dessert 2 minutes before the finish of the cooking time.
