Candied Bean Curd


6 oz. bean curd

2 oz. flour

1 egg

2 cups lard

3 oz. sugar

A little shredded green and red plum

1 tsp. black sesame seeds To Prepare:

1. Cut bean curd into rectangular pieces 5 cm. long and 1 cm. wide and coat with flour. Beat the egg with a little water and flour and cover bean curd with the batter.

2. Heat the lard over a low flame, stir-fry the bean curd pieces and remove from heat. Transfer oil to a high flame and fry the bean curd again until it turns yellow, and then drain.

3. Boil 1/4 cup of water with sugar over a low flame and stir. When the sauce begins to make threads, and turns light yellow, add the fried bean curd and stir enough to cover with the sauce. Sprinkle with the shredded plum and black sesame seed, put on a serving dish and serve.
