Chicken Croquettes Recipe

Cooking Time: 15 minutes

You will need for 2 servings: 1 packet of bread Worcester sauce sauce nutmeg 1 pint milk corn oil for deep 6 oz. cooked chicken, frying minced For coating: egg and breadcrumbs 1 level tablespoon cornflour

1 Make sauce as directed using 1 pint milk.

2 Stir in the chicken, Worcester sauce and a sprinkling of nutmeg.

3 Leave until cold then divide into 4 portions.

4 Coat with cornflour, then egg and crumbs.

5 Heat corn oil to 375°F. Fry croquettes until golden. Drain well and serve at once.

Chicken pilaff

Cooking Time: 30 minutes You will need for 4 servings:

2 rashers bacon 1 pint chicken stock

1 onion

6 oz. Patna rice

2 tablespoons oil salt and pepper

2 oz. raisins

1 green pepper

8 oz. cooked chicken

1 Remove the rind from bacon, chop roughly and fry in a large pan.

2 Chop onion, add with the oil to the bacon. Cook over a gentle heat for 5 minutes.

3 Add rice and cook for a further 5 minutes, stirring throughout with a fork.

4 Add stock, season to taste, add the raisins and pepper, chopped or cut into shreds.

5 Bring to the boil, reduce the heat, cover and simmer until the rice is tender and the stock is absorbed.

6 Chop chicken, stir into the rice. Cook for 5 minutes. Turn into a hot dish and serve.
