Chicken Curapao Recipe

Cooking Time: 40 minutes

You will need for 4 servings:

2 tablespoons corn oil 1 small can mandarin

4 chicken joints, oranges, drained skinned and trimmed 1 teaspoon tarragon

1 packet savoury vinegar white sauce mix 1 tablespoon curapao

1 pint milk peanuts

1 Heat the corn oil in a pan and fry the chicken joints lightly on both sides. Remove to a casserole.

2 Make up the white sauce mix as directed on the packet using 1 pint milk.

3 Stir in the mandarin orange juice, tarragon vinegar and cura9ao. Pour the sauce over the chicken joints.

4 Cover and cook in a moderate oven(350‚°F-Gas Mark 4) for 25-30 minutes.

5 Add the mandarin oranges and sprinkle the top with peanuts.

6 Return to the oven for a further 10 minutes. Serve with plain boiled rice.
