Chocolate Cake Recipe

Cooking Time: about 25 minutes.

You will need:

4 oz. Luxury margarine.

5 oz. Castor sugar.

4 oz. Self-raising flour.

1 heaped tablespoon cocoa.

For the filling:

2 oz.

Plain chocolate

2 oz. Luxury margarine.

1 oz. Castor sugar.

2 dessertspoons hot water.

2 eggs.

1 tablespoon milk glac6 icing (85) or castor sugar.

1 dessertspoon milk flavouring essence (optional)

1 Grease two 7-in. Sandwich tins and line the bottom with greaseproof paper.

2 Put margarine and sugar in a mixing bowl. Sieve in flour and cocoa.

3 Add milk and eggs and beat all ingredients together with a wooden spoon for 2 minutes.

4 Divide the mixture between the tins and smooth the top.

5 Bake in the middle of a moderate oven (350‚°F- Gas Mark 4) for 20-25 minutes.

6 Turn on to a wire tray to cool. When the cakes are cold, sandwich together with the filling and coat the top with glace icing or sprinkle with castor sugar.

To make the filling.

1 Melt the chocolate in a basin over hot water.

2 Allow the chocolate to cool and whisk it together with the margarine and sugar until light and fluffy.

3 Add the water, milk and 1-2 drops flavouring.

4 Whisk again and use.

For a ‚ Ëspecial‚ „ cake, make double the quantity of filling and use half of it as a frosty topping using small palette knife or fork to swirl a design on the top before the filling sets.

To make chocolate icing.

Add a few drops water and olive oil to melted chocolate. Or, make a coating icing: blend.

2 oz. Melted chocolate with 4 oz. Icing sugar and 1 tablespoon water. A few drops of oil can be added for extra gloss.
