Warm Air Flip.
You will need for 4 persons:
4 fresh eggs nutmeg.
4 tablespoons sugar or 2 pints ale sugar syrup.
1 Separate the egg yolks from the whites.
2 Whip the whites of 2 eggs until frothy, then add the sugar and nutmeg.
3 Continue whipping then add the 4 egg yolks.
4 Pour the ale into a pan and heat until it froths.
5 Add the beaten egg mixture, gradually stirring the boiling ale all the time.
6 When this comes to a frothy lather, spoon the mixture into mugs and serve.
Hot Brandy Punch.
You will need for 12-14 persons:
Rind 2 fresh lemons 6 tablespoons sugar cinnamon or sugar syrup nutmeg 1 pint boiling water mace juice 2 fresh lemons cloves 1 bottle brandy.
1 Put the lemon rind, spices and sugar into the boiling water, and let simmer for 10 minutes.
2 Strain and pour the mixture into a warmed punch bowl.
3 Add the lemon juice and brandy.
4 Set the mixture alight and spoon into punch cups.
