Cod Steaks Valencia Recipe
Cooking Time: 15-20 minutes You will need for 4 servings:
4 cod steaks 1 oz. Butter.
2 tablespoons white grated rind orange wine salt and pepper.
3 tablespoons orange juice.
1 Prepare the fish and put it into a fireproof dish.
2 Pour over the wine and orange juice and leave for 10 minutes.
3 Mix the butter with the grated orange rind and put in small pieces over the fish. Season with salt and pepper.
4 Cover the dish tightly with a lid, or cover with aluminium foil and bake in a moderate oven (350‚°F – Gas Mark 4) for about 20 minutes.
5 Drain off the liquor from the fish, put into a small pan and reduce a little by boiling and then pour over the fish.
6 Garnish with segments of orange.
Cooking Time: 20-25 minutes.
You will need for 4 servings:
1 lb. cod fillet pint cider salt and pepper 1 oz.

Butter 1-2 tomatoes, peeled 1 oz. Cornflour and sliced 8 oz. Mashed potato 2 oz. Mushrooms, grated cheese sliced.
1 Cut the fish into pieces and put into a fireproof dish.
2 Season and add tomatoes and mushrooms.
3 Pour on the cider and bake about 15 minutes in a moderately hot oven (375‚°F – Gas Mark 5).
4 Strain off the liquor, add the butter and thicken with the cornflour.
5 Correct the seasoning and pour the sauce over the fish.
6 Pipe the potato round the edge of the dish, sprinkle with cheese and return to the oven to brown.
