Crab Salad Recipe

You will need for 4 servings:

lettuce 3-4 cooked new watercress potatoes, diced 3-4 firm tomatoes mayonnaise (see page

1 small can crab or 82)

1 fresh crab

1 Arrange the lettuce and watercress in a salad bowl and surround with thin wedges of tomato.

2 Mix the crab meat and potatoes together.

3 Add enough mayonnaise to moisten.

4 Pile on top of the lettuce.

Fish salad

You will need for 4 servings:

lettuce 1 pint mayonnaise small piece of (82) cucumber 1-2 gherkins, chopped 2 tomatoes 1 teaspoon capers, watercress chopped 12 oz. cold cooked salt and pepper fish lemon juice

1 Prepare the salad plants.

2 Remove all skin and bone from the fish and flake finely. Bind with a little of the mayonnaise.

3 Add flavourings and seasonings.

4 Pile the fish in the centre of a serving dish, and coat with the remaining mayonnaise.

5 Put slices of cucumber round the edge, surround with lettuce and use the tomatoes and cress for garnish.
