Curried Eggs Recipe
Cooking Time: 25-30 minutes You will need for 4 servings:
4-6 hard-boiled eggs 1 small onion, peeled and chopped.
1 small apple, peeled and chopped.
2 oz. Butter.
2 teaspoons curry powder.
1 level teaspoon curry paste.
2 teaspoons cornflour J pint stock or water salt lemon juice 4 oz. Patna rice, cooked for 12 minutes in boiling salted water.
1 Shell the eggs and cut into halves.
2 Fry the onion and apple in the butter for a few minutes, then add curry powder, curry paste and cornflour and mix well. Continue cooking for a further 3-4 minutes.
3 Add the stock, stir until boiling.
4 Add seasoning and lemon juice.

Cover and simmer for about 20 minutes.
5 Put the eggs into the sauce to heat through, then place on top of rice and pour the sauce over.
Macaroni and egg savoury.
Cooking Time: 15 minutes.
You will need for 4 servings:
3 oz. Macaroni 1 pint milk.
1 pint water in which macaroni was cooked.
1 oz. Butter 1 oz. Flour 4 oz. Grated cheese salt and pepper 4 eggs.
1 Break up the macaroni and cook in boiling salted water for about 15 minutes until tender.
2 Strain and reserve 1 pint of the water.
3 Use this with the milk and make a sauce with the butter and flour.
4 Add most of the grated cheese and seasoning.
5 Put into a shallow fireproof dish.
6 Make four hollows and drop in the eggs.
7 Sprinkle with the remaining cheese and a little salt and pepper and bake in a moderately hot oven (375‚°F – Gas Mark 5).
