You will need for 1 glass:

4-5 Ice cubes 3 parts red wine (Claret, 1 part dry French Chianti or Burgundy) vermouth 1 slice lemon rind.

1 Put the Ice cubes into a glass jug.

2 Pour the vermouth and wine over the ice.

3 Stir vigorously; strain and pour into a chilled martini glass.

4 Twist the lemon rind over the mixture and drop it in.

Cap Ferrat.

You will need for 1 glass: 4-5 Ice cubes 3 parts dry red wine juice 1 fresh lemon (Burgundy, Chianti 1 teaspoon sugar or or Claret) sugar syrup 1 drop Pernod.

1 Put the Ice cubes into a glass jug.

2 Pour the lemon juice, sugar and wine over the ice.

3 Stir vigorously; strain and pour into a chilled martini glass.

4 Add the Pernod and serve.

1 part brandy Chablis or Muscadet)

2 Pour the lemon juice, brandy and wine over the ice.

3 Stir vigorously; strain and pour into a chilled martini glass.
