Dundee Cake Recipe
Cooking Time: 2-3 hours You will need:
6 tablespoons corn oil
6 oz. soft brown sugar
10 oz. plain flour pinch salt H level teaspoons baking powder
2 tablespoons milk
6 oz. currants
6 oz. sultanas
4 oz. peel
2 oz. glacs cherries, chopped
2 oz. almonds, blanched and chopped
2 oz. almonds, blanched (for top of cake)
Grease and line a 2-lb. cake tin. Prepare the fruit and dredge with a little of the flour.
Beat the com oil, eggs and sugar together well, then add the flour, sifted with salt and baking powder. Add the milk and finally stir in the fruit and nuts.
Turn into the prepared tin and bake in a slow oven (310°F – Gas Mark 2).
After the first 30 minutes arrange the remaining almonds on top of the cake.
