Egg And Ham Flan Recipe
Cooking Time: 15 minutes You will need for 4 servings:
6 eggs 1 oz. butter
1 level teaspoon made mustard
4 oz. chopped cooked ham
1 pint white sauce (82)
1 7-in. baked pastry case grated cheese
1 Boil the eggs for 7 minutes, then remove shells and cut into slices.
2 Melt the butter in a pan, add the mustard and ham and saute for a few minutes.
3 Add the sauce and eggs. Season carefully.
4 Pour into the pastry case, sprinkle with grated cheese and brown under the grill.
Egg and mushroom savoury
Cooking Time: about 15 minutes
You will need for 4 servings:
4 eggs 1 pint milk
2 oz. butter salt and pepper
4 oz. mushrooms, parsley and paprika to chopped garnish
1 oz. cornflour fingers of toast
1 Boil the eggs for 7 minutes, put into cold water for 1 minute and remove the shells.
2 Melt the butter, add the mushrooms and cook until just tender – about 5 minutes.
3 Stir in the cornflour and mix well.
4 Add the milk, stir until boiling and boil for
3 minutes, season carefully.
5 Cut the eggs in halves and put into a serving dish.
6 Pour the sauce over and garnish with chopped parsley and paprika. Serve with fingers of toast.
