Fish Maitre D'hote! Recipe

Cooking Time: 15-20 minutes You will need for 4 servings: 1 lb. Fillets white fish lemon juice (sole, plaice or J pint maitre d'hotel haddock) sauce (22) salt and pepper.

1 Prepare the fish and season each fillet with salt and pepper and a squeeze of lemon juice.

2 Fold each fillet in half with the skinned side inside. Arrange in a lightly greased fireproof dish.

3 Cover and cook in a moderate oven (350‚°F -Gas Mark 4) for 10-15 minutes.

4 Remove the fillets to a serving dish and coat with the maitre d'hotel sauce.

5 Garnish with lemon and parsley.

Fish bonne femme.

Cooking Time: 20 minutes- depending on thickness of fillets.

You will need for 4 servings: 4 fillets of sole (plaice 1 teaspoon parsley, chopped salt and pepper 1 pint white wine or cider.

1 pint white sauce.

1 oz. Butter or any white fish may be used)

4 oz.

Mushrooms, thinly sliced 1 shallot or small piece of onion, chopped.

1 Put the fish into a pan with the mushrooms, onion, parsley and seasoning.

2 Cover with the wine and poach very gently until cooked.

3 Remove the fish carefully on to a serving dish.

4 Continue to boil the remaining liquid until it is reduced by half.

5 Add to the hot sauce and stir in the butter.

6 Pour over the fish and brown under the grill.
