Fish Meuniere Recipe
Cooking Time: about 10-15 minutes You will need for 4 servings:
1 lb. White fish (sole, plaice or any white fish can be used)
1 tablespoon flour salt and pepper about 4 oz. Butter, for frying 4 teaspoons lemon juice.
1 Prepare the fish and coat with flour to which salt and pepper has been added.
2 Heat most of the butter in a shallow pan and fry the fish on both sides until golden brown and well cooked.
3 Put on to a serving dish and keep hot.
4 Add the remaining butter to the pan and heat until it begins to brown.
5 Add the lemon juice and pour over the fish.
6 Garnish with lemon and parsley.
Cooking Time: 20-25 minutes You will need for 4 servings:
1 lb. Fillets white fish salt and pepper lemon juice.
1 small onion, sliced very thinly 4 tomatoes, peeled and sliced.
2 tablespoons grated cheese 2 tablespoons breadcrumbs 1 oz.

1 Trim the fish, season with salt and pepper and lemon juice and arrange in a fireproof dish.
2 Add the onion and tomatoes.
3 Mix the cheese and breadcrumbs together and sprinkle on top.
4 Dot with butter and bake about 20 minutes in a moderate oven (350‚°F – Gas Mark 4).
