Fresh Haddock Cider Recipe
Cooking Time: 20-25 minutes You will need for 4 servings:
1-2 lb. fresh haddock 1 lemon, cut into thick fillet.
2 oz. Butter 1 pint cider 2-3 tomatoes, peeled and sliced.
4-6 mushrooms, sliced slices salt and pepper little chopped parsley 1 small shallot, chopped finely.
1 Cut the fish into pieces and put into a greased fireproof dish.
2 Put small pieces of butter on top and then add the cider.
3 Cover with tomatoes, mushrooms and lemon.
4 Season carefully, cover and bake in a moderately hot oven (375‚°F – Gas Mark 5).
5 Before serving, sprinkle with parsley and shallot.
Cooking Time: 25-30 minutes.
You will need for 4 servings:
1 lb. Smoked haddock 1 pint cheese sauce.

2 rashers streaky breadcrumbs bacon, diced little grated nutmeg.
2 onions, finely little butter chopped.
1 Cook the haddock, remove the skin and bone and flake finely.
2 Cook the spaghetti in boiling, salted water.
3 Fry the bacon, add the onions and cook in the bacon fat until soft.
4 Mix the fish, spaghetti, bacon and onion together in a casserole and pour over the cheese sauce.
5 Sprinkle with breadcrumbs and nutmeg, dot with butter and bake in a moderate oven (350‚°F – Gas Mark 4).
