1/2 teaspoon nutmeg.
1/2 teaspoon ground cardamom.
1/2 teaspoon ground coriander.
4 medium red-skinned potatoes, scrubbed and diced.

1/2 cup warm water.
1. Prepare Fried Spiced Potatoes and allow them to steam while you cook the fruits and vegetables.
2. In a heavy frying pan heat the oil over medium-high heat. Add the nutmeg, the cardamom, and the coriander. Stir in the potatoes. When they are coated with the oil and the spices, sprinkle them with the salt. Fry over moderate heat, stirring frequently, for 10 minutes. Pour in the water, cover, and simmer on low heat for 5 minutes. Turn off the heat and leave the potatoes covered until you are ready to combine them with the remaining ingredients.
