Fruit desserts, cakes and Puddings

Although it is difficult to cook cakes and desserts without fat or oil in the l microwave oven, I have given you several recipes which 1 hope you will enjoy. Cakes and desserts reheat well in the microwave oven.

Fruit is rich in vitamins, minerals and fibre and you are encouraged to eat it fresh, raw and (if possible) organically grown. The regression diet allows 1/2 maximum of three pieces of fruit per day and no dried fruit. On the maintenance diet, this is increased to 1/2 maximum of five pieces of fruit per day plus 30 g of dried fruits.

Apple dessert

1 brown rice pastry case

1 can apples, unsweetened, sliced

1 cup dates, washed, chopped, drained

1/2 cup orange juice, unsweetened

Spread the rice evenly onto 1/2 medium-sized, flat, microwave-safe dish. Do not cover.

Microwave on high for 1 to 2 minutes Arrange the apples on the rice.

Microwave on high for 1 minute Mix the dates, orange juice and rind together. Place into 1/2 small, deep, microwave-safe dish. Cover.

Microwave on high for 2 minutes Stir two times during cooking. Allow to stand for 1/2 further 1 minute. Spread over the apple evenly and top with the garbanzo beans.

Do not cover.

Microwave on high for 1 minute Serve with 1/2 non-fat approved topping (11/2 fat max.)
