Greek Salad

Prep time: 10 minutes Cooking time: 10 minutes Servings: 8


3 cucumbers. seeded and sliced

1 1/2 cups of Feta cheese. crumbled (made from goat’s milk)

1 cup of black olives. pitted and sliced

3 cups of Roma tomatoes. diced cup of diced. oil packed sun-dried tomatoes (drained. oil reserved)

2 red onion. sliced


– In a large salad bowl. combine cucumbers. feta cheese. olives. Roma tomatoes. sun-dried tomatoes.

2 tablespoons reserved sun-dried tomato olive oil. and red onion. Toss together gently till combined.

– Chill just before serving.
