Halibut With Mimosa Sauce Recipe

Cooking Time: about 20 minutes.

You will need for 4 servings: 2 steaks halibut salt, pepper and lemon (allowing 1 steak for juice 2 persons)

To make sauce: f oz. Butter 1 oz. Flour 1 pint milk and fish stock.

Butter little milk.

2 hard-boiled eggs salt and pepper lemon juice.

1 Put the fish into a fireproof dish with salt, pepper, squeeze of lemon juice, butter and a little milk. Cover and bake in a moderate oven (350‚°F – Gas Mark 4), for about 15-20 minutes.

2 When cooked, remove to a serving dish and keep hot.

3 Make the liquor up to 1 pint with milk and use to make a sauce with the butter and flour.

4 Remove the yolks from the hard-boiled eggs. Chop the whites, add to the sauce. Season with salt, pepper and lemon juice.

5 Carefully stir in the egg yolk which has been rubbed through a sieve.

6 Pour some of the sauce over the fish and serve the rest separately.

7 Garnish with lemon and parsley.

Baked hake.

Cooking Time: 20-25 minutes You will need for 4 servings:

4 steaks of hake lemon juice.

1 onion, peeled and finely chopped.

1 egg yolk salt and pepper 2-3 oz. Butter chopped parsley.

3 Beat the egg yolk, add lemon to taste, salt and pepper and pour over the fish.

4 Dot each steak with butter, cover and bake in a moderate oven (350‚°F – Gas Mark 4) about 20 minutes.

5 Put the fish on to a serving dish. Pour the liquor into a small pan. Add the rest of the butter a little at a time. Make quite hot and pour over the fish.

6 Sprinkle with parsley before serving.
