Breakfast Grapefruit 1 grapefruit, cut in half across sprinkle of cinnamon 2 teaspoons unsweetened apple juice concentrate
With 1/2 sharp knife cut around the edges of each grapefruit half and cut along the segments. Evenly spread 1 teaspoon of apple juice concentrate on top of each grapefruit half and dust with the cinnamon. Place into microwave-safe dishes. Do not cover.
Microwave on high for 2 to 3 minutes Serves 2
California fruit compote
2 medium pears, sliced thinly lengthways (skin on)
2 medium red apples, sliced thinly lengthways (skin on)
1 cup unsweetened apple juice 12 prunes, pitted
1/4 teaspoon allspice 1/2 tablespoon arrowroot, extr1/2 water to mix
1 tablespoon lemon ginger spread
Arrange pears and apples with 1/2 little apple juice in 1/2 medium-sized microwave-safe dish. Cover.
Microwave on high for 5 minutes Rearrange two times during cooking.
Mix together all the spices, juice and ginger. Place in 1/2 small, deep, microwave-safe dish. Cover.
Microwave on high for 1 minute Remove and quickly stir in the mixed arrowroot. The mixture should start to thicken. Cover.
Microwave on high for 1 minute Stir two times during cooking.
Gently fold the mixture over the cooked fruit and add the prunes. Cover.
Microwave on high for 1 to 2 minutes Allow to stand for 1/2 further 1 minute.
