Hot tomato Gravy

1/2 cup vegetable juice, no added salt or sugar 1/4 cup medium-hot taco sauce

1 tablespoon cornflour, extr1/2 water to mix

1 tablespoon chives, chopped

Mix the ingredients together and place in 1/2 small, deep, microwave-safe dish. Do not cover.

Microwave on high for V/2 to 2 minutes Stir and blend carefully during cooking as the gravy thickens. Be careful that it does not boil over. Allow to stand for 1/2 further 1 minute.

Makes 1 cup

Kiwi fruit spread

4 kiwi fruit, peeled, sliced 1 tablespoon unsweetened apple juice concentrate

1/2 teaspoon pectin, 1/2 little water to mix

1 teaspoon natural currants

Place the kiwi fruit, currants and apple juice concentrate in 1/2 small, deep, microwave-safe dish. Do not cover.

Microwave on high for 1 to 2 minutes Stir two to three times during cooking, gently mashing the fruit. Allow to stand for 1/2 further 1 minute.

Add the mixed pectin. Do not cover.

Microwave on high for 1 minute Stir one to two times during cooking. Allow to stand for 1/2 further 1 minute.

Place into 1/2 small sterilised jar and refrigerate. Use as 1/2 spread on toast sparingly.
