Liver Continental Style Recipe

Cooking Time: 15 minutes You will need for 4 servings: 1 lb. calf’s liver 2 rashers back bacon cornflour 1 small onion seasoning 1 lemon

1 oz. butter 8 oz. boiled Patna rice

1 Slice liver 1 inch thick, coat with cornflour seasoned with salt and pepper.

2 Fry liver in melted butter, 3-4 minutes each side.

3 Remove from pan, keep hot.

4 Fry bacon until just crisp, keep hot.

5 Slice onion thinly, cook until brown in fat remaining in pan.

6 Add 3 tablespoons hot water and bring to the boil. Season to taste.

7 Sprinkle liver with lemon juice.

8 Arrange bacon on rice, place liver on top and pour onion gravy over.

Kidney and bacon de luxe

Cooking Time: about 20 minutes

You will need for 4 servings:

2 sheep’s kidneys 2 large tomatoes

2 rashers bacon

2 oz. butter

4 oz. mushrooms

4 eggs

4 slices toast salt and pepper sugar

1 Skin kidneys, remove the core and soak in cold water for 5 minutes.

2 Chop kidneys and bacon, fry in 1 oz. butter for 5 minutes over a gentle heat.

3 Chop mushrooms, add to kidney and bacon with remaining butter as required. Fry gently for a further 5 minutes.

4 Remove from pan and keep hot. Fry eggs.

5 Cut tomatoes in thick slices, sprinkle with a little salt, pepper and sugar. Fry lightly.

6 Spread mushroom mixture over each slice of toast. Top each with a fried egg and garnish with sliced tomato.
