Mexican Chicken Cups

Preparation

• Cut the chicken breast into chunks.

• Add the taco seasoning.

• Place the chicken in individual lettuce cups.

• Top with the tomatoes, avocado, onions, olives, and cheese.

• Add salsa or hot sauce to taste.

Serves 2 to 4

Ingredients

2 whole chicken breasts, cooked (1 lb.)

1 head of iceberg lettuce leaves

1 large tomato, chopped

1 avocado, sliced

1 bunch of green onions, chopped

5 black olives, sliced

1/2 cup of nonfat cheese (preferably cheddar or Monterey Jack), grated

1 tbsp of taco seasoning
