Monday Lunch Recipe

Cooking Time: about 30 minutes You will need for 4 servings:

1 tablespoon

1 lb. cold cooked lamb

1 large onion

1 oz. butter cornflour 1 pint stock 4 oz. tomatoes salt and pepper

1 Slice meat, removing fat if necessary. Chop onion finely.

2 Melt butter, add onion, cook over a gentle heat for 5 minutes.

3 Blend in the cornflour, gradually stir in the stock, bring to the boil.

4 Reduce the heat. Add the tomatoes, skinned and chopped, simmer for 15 minutes.

5 Season to taste, add lamb, cover and cook for a further 10 minutes.

6 Serve with creamed potatoes.

Leftover lunch

Cooking Time: about 30 minutes You will need for 4 servings:

2 oz. dripping 1-1 lb. cooked meat

2 onions (beef, pork or lamb)

4 large cooked cut into cubes chopped potatoes mixed herbs salt and pepper 4 eggs

1 Heat the dripping and fry the finely chopped onions until tender.

2 Add potato and cook until golden brown, add meat and season with salt, pepper and a pinch mixed herbs.

3 Cook until thoroughly heated, adding more fat if necessary to prevent the mixture from sticking to the pan.

4 Transfer to a shallow warmed dish.

5 Fry the eggs and place on top of the meat. Serve at once.
