Mushroom Cod Recipe

Cooking Time: 35 minutes You will need for 4 servings:

1 lb. cod fillet 1 packet mushroom

1 oz. Cornflour sauce salt and pepper milk.

1 tablespoon corn oil To garnish:

1 small onion, finely chopped parsley chopped 4 oz. mushrooms, thinly sliced.

1 Skin the cod and cut into three portions. Wash and dry well.

2 Coat with the cornflour to which salt and pepper have been added.

3 Put a piece of foil on to a baking sheet. Place the cod on top.

4 Heat the com oil. Add the onion and mushrooms and fry until soft. Spoon over the cod.

5 Fold over the sides of the foil and bring both ends up to overlap forming a parcel.

6 Cook in a moderately hot oven (375‚°F – Gas Mark 5) for 30 minutes. Open the foil and drain the liquor into a measuring jug.

7 Arrange the cod on a warmed serving dish.

8 Make up the sauce as directed on the packet, using the fish liquor made up to 1 pint with milk.

9 Pour the sauce over the cod and sprinkle with chopped parsley.
