Mushroom Rarebit Recipe

Cooking Time: about 20 minutes.

You will need for 4 servings:

1 lb. mushrooms, 2 tablespoons stock or sliced.

2 oz. Butter salt and pepper.

1 tablespoon tomato paste.

Water 2 tablespoons grated Parmesan cheese 4 slices buttered toast.

1 Saut6 the mushrooms in the butter slowly for about 10 minutes.

2 Add salt and pepper and the tomato paste mixed with the stock.

3 Add the cheese and continue slow cooking for a further 10 minutes.

4 Serve on hot buttered toast.

Glazed mushrooms with ham.

Cooking Time: 10-15 minutes.

You will need for 4 servings:

2 oz. Butter 4 level teaspoon.

2 tablespoons brown sugar 1 teaspoon plain flour 1 lb.

Mushrooms, thickly sliced grated nutmeg.

1 level teaspoon powdered mace.

4-6 slices cooked ham.

3 tablespoons sherry.

1 Melt the butter, add the sugar and flour mixed together and heat slowly until the sugar has melted.

2 Add mushrooms, nutmeg and mace. Cover and cook very slowly for 5 minutes.

3 Remove the cover, put the ham over the mushrooms and increase the heat so that the ham is heated through.

4 Add the sherry, then turn out upside-down on to a serving dish.
