2 oz. minced chicken
2 oz. minced shrimp 1 tbsp. each minced ginger and scallion
1 tbsp. sherry A pinch of salt
2 egg whites
2 tbsp. cornstarch
2 oz. mashed bean curd 20 mushrooms 1 oz. ham A few green leaves
1 salted hard-boiled egg yolk
1 cup clear broth 1/2 oz. green beans
2 tbsp. chicken fat
1. Combine chicken, shrimp, ginger and scallion juice, sherry, salt, egg whites, cornstarch and mashed bean curd.
2. Remove the mushroom stems. Sprinkle with cornstarch. Make rounds with chicken and shrimp mixture to cover the mushrooms. Cut the ham into diamond shapes, green leaves and yolk into flower shape around. Put them on the mixture for decoration. Steam for 3 minutes.
3. Bring the broth to a boil and add salt, green beans. Thicken with cornstarch, add chicken fat. Pour over mushrooms, and serve.
