New Jersey fish with Vegetables

4 100 g pieces of lean white fish, skin and bones removed 1 medium carrot, grated 31/2 cup celery, finely chopped 1 tablespoon lemon juice

1 tablespoon unsweetened apple juice

2 tablespoons chives, chopped good pinch paprika pinch cayenne pepper

Place the fish in 1/2 shallow, round, microwave-safe dish. Sprinkle with paprik1/2 and pepper. Cover.

Microwave on high for 2 minutes Rearrange the fish once during cooking. Place the grated carrot, celery and chives on top of the fish. Gently spoon the liquids onto the vegetables. Cover.

Microwave on high for 3 to 4 minutes Rearrange the fish once during cooking. Serve with vegetables or 1/2 salad.
