1 lb. bean curd

3 tbsp. cooked bamboo shoots

1 oz. diced pork

3 tbsp. each ham and coriander

1 oz. vegetable oil

2 tbsp. each minced scallion, ginger and garlic

1 cup clear broth

2 tbsp. soy sauce

1 tbsp. sherry

Sugar, pepper powder and salt to taste

3 tbsp. shelled shrimp

2 tbsp. dissolved cornstarch

1 tbsp. sesame oil

To Prepare:

1. Steam bean curd and dice into 2 cm. cubes,

2. Dice bamboo shoots and pork. Mince coriander and ham.

3. Heat oil over a high flame. First, saute scallion, ginger and garlic, then add the pork. Pour in the broth, soy sauce, salt, sherry, sugar, shelled shrimps, bamboo shoots and bean curd. Bring to a boil and add the sesame oil and dissolved cornstarch. Transfer to a dish, sprinkle with minced ham and coriander and serve.
