Onion Crisp Recipe

Cooking Time: about 25 minutes You will need for 4 servings:

1 lb. small onions

1 pint milk

4 oz. cooked green peas 21 oz. butter

2 oz. flour salt and pepper

1-2 packets potato crisps

2 tablespoons finely chopped or minced nuts

1 Peel the onions, cut in halves, unless very small, and cook in the milk with a little water until tender.

2 Drain and put into a greased fireproof dish with the peas. Reserve the liquid.

3 Melt 2 oz. of the butter, add the flour and mix well.

4 Add 1 pint of the liquid in which the onions were cooked, stir until boiling and boil for 1 minute. Season carefully.

5 Pour the sauce over the onions and peas.

6 Crumble the potato crisps, mix with the nuts and sprinkle on top of the sauce. Add butter.

7 Brown the top under the grill or in a hot oven.
