Onions, onions, onions! There are over 300 varieties, and the common brown, red and white plus shallots and leeks all provide similar benefits. Onions are not eaten in large quantities plus they are fairly low in the supply of the main nutrients: calcium (22mg), iron (0. 5mg) and phosphorus (27mg). The flavour is the major benefit in cooking, and as you may know, you can nearly fry an onion without added oils. Onions contain natural antiseptic oils such as allyl disulphate and cycloallin.

Research has shown that cycloallin has the unique ability to dissolve blood clots which can form on the inside of blood vessels and, in particular, the veins. The process is termed fibrinolysis. Another study suggested that cycloallin may also dissolve the fibrin formed around damaged joints or inflamed joints, as with arthritis. The good news is that cycloallin is present in onions, whether cooked or raw.
Other research has revealed that the substance quercetin, which is also well supplied by onions, has numerous beneficial properties. Quercetin is a water-soluble pigment, a flavonoid. It provides anti-histamine and anti-inflammatory qualities. It is also classed as a phytoestrogen and was shown to inhibit breast cancer cells in test tube research. Quercetin is a potent antioxidant, protecting against heart disease. It is also valuable for diabetics as quercetin inhibits the enzyme that causes accumulation of a substance called sorbitol, a cause in the deterioration of the eyes, kidneys and nerves in diabetics. Onions have a very low glycemic index and are therefore safe and ideal for most diabetics to include with cooking. Onions also supply a fair amount of potassium (144mg) but really it is the trace substances plus the sulphur oil content that gives onion its mighty power not only to keep friends at a distance, but also those nasty internal neighbours! Onions will provide internal cleansing. Onions are also recognised to protect and relieve prostatitis, reduce blood sugar, blood pressure, reduce sinusitis, colds and infections. Onion oil is often used for treatment of ear aches and catarrh.
Onions also promote beneficial bacteria in the lower intestine and cleansing of the respiratory system. Onions are great but beware of the added fats, especially with the barbecue and those sausages add heaps of onion but hold your horses on all that saturated fat and cholesterol. A baked or roasted onion is really ideal and full of mild flavour. Also try onion bread or French onion soup. If you havent got an onion in the kitchen, youre in trouble as so many recipes need it: the quiche, the pizza, the garden salad with the sweeter red onion. Chives, another member of the onion family, are a great kitchen companion. You can grow them on the 21st floor or higher and they add charm to numerous snacks and entrees. If you have a problem with onion breath, chew some fresh parsley or mint and restore your confidence.
