Potato Eggs Recipe

Cooking Time: 3-4 minutes to fry You will need for 4 servings:

8 oz. cooked potatoes I level teaspoon 1 egg yolk 1 oz. butter 1 teaspoon chopped parsley 1 level teaspoon salt grated nutmeg

1 oz. grated cheese

4 hard-boiled eggs egg and breadcrumbs fat for deep frying

1 Mix the potatoes with the egg yolk and butter and add parsley, salt, nutmeg and cheese.

2 Divide into four portions and coat the hard-boiled eggs.

3 Roll in flour, then coat with egg and breadcrumbs.

4 Fry in deep fat until crisp and golden.

5 Serve hot with salad.

Eggs Neapolitan

Cooking Time: about 20 minutes You will need for 4 servings:

6 oz. rice

1 small onion, finely chopped

1 pint tomato pur6e (1 small can)

1 pint stock or water

3 oz. macaroni

1 oz. butter

2 tomatoes, peeled and sliced

4 hard-boiled eggs salt and pepper little chopped parsley

1 Wash the rice and put into a pan with the onion, tomato puree and stock.

2 Cook until the rice is tender.

3 Meanwhile, break up the macaroni and cook in boiling salted water.

4 Strain, add the butter and tomatoes.

5 Make a ring of the rice on a serving dish.

6 Cut the eggs in half and put in the centre and cover with macaroni.

7 Sprinkle with parsley before serving.
