Prawn And Egg Salad Recipe
You will need for 4 servings: endive or lettuce few radishes
1 pint prawns (fresh, capers frozen or canned) French dressing (see
3 hard-boiled eggs, sliced
1 Arrange the endive or lettuce round a flat serving dish.
2 Arrange the prawns and slices of egg neatly in layers.
3 Garnish with radishes and capers and serve the dressing separately.
Apple and prawn salad
You will need for 4 servings:
lettuce 1 pint prawns (fresh,
2 apples frozen or canned)
2 hard-boiled eggs mayonnaise (see page

few radishes lemon juice
1 Line a salad bowl with lettuce, reserving the heart for garnish.
2 Core but do not peel apples, cut into dice.
3 Slice the eggs, olives and some of the radishes but keep one or two for garnish.
4 Mix the prawns with the other ingredients and bind with mayonnaise.
5 Add a little lemon juice and seasoning, if required.
6 Pile on top of the lettuce and garnish with radishes and the lettuce heart.
