Quick Egg Rissoles Recipe

Cooking Time: 5-7 minutes.

You will need for 4 servings:

4 hard-boiled eggs salt and pepper.

1 tablespoon flour 1 fresh egg

1 tablespoon finely 1-2 tablespoons thin chopped parsley cream or milk.

2 tablespoons finely breadcrumbs chopped ham fat for frying.

1 Chop the hard-boiled eggs and mix with the flour, parsley, ham and seasoning.

2 Bind with the egg and cream.

3 Shape into rissoles, dip in milk and coat with breadcrumbs.

4 Fry in shallow fat until crisp and golden, turning once.

Egg a la tripe.

Cooking Time: about 10 minutes.

You will need for 4 servings:

6 hard-boiled eggs 1 pint basic white.

3-4 medium-sized sauce onions salt and pepper.

2 oz. Butter chopped parsley.

1 Cut the eggs into slices.

2 Peel and slice onions and saute in the butter until soft and lightly coloured.

3 Make the white sauce, add salt and pepper.

4 Add the eggs and onions.

5 Pour into a serving dish and serve hot sprinkled with chopped parsley or a little red pepper.
