Salad Americana Recipe

You will need for 4 servings:

1 lettuce.

4 oz. Cream cheese.

1 oz. Chopped walnuts j level teaspoon celery salt.

1-2 sticks celery, chopped.

2 tablespoons thin cream.

1 dessertspoon lemon juice.

1 orange.

1 Arrange the lettuce in a fairly shallow bowl.

2 Mix together the cheese, walnuts, celery salt, celery, cream, lemon juice and pile in the centre of the lettuce.

3 Peel the orange, removing as much of the pith as possible.

4 Divide ioto segments and arrange round the salad.

Grapefruit and vegetable salad

You will need for 4 servings:

2 large grapefruit.

2 tablespoons cooked green peas.

2 tablespoons cooked, diced carrots.

2 tablespoons cooked, diced French beans.

1 teaspoon minced raw onion.

1 tablespoon mashed, cooked potatoes.

2 tablespoons mayonnaise (82)

1 teaspoon tomato purge watercress.

1 Cut the grapefruit in halves, remove the pulp with a teaspoon, then remove as much of the pith as possible without breaking the skin.

2 Mix the grapefruit pulp with the peas, carrots, beans and onion.

3 Mix the potato, mayonnaise, tomato puree together and add to the vegetables.

4 Pile into the grapefruit cases and decorate with watercress.

With other vegetables: The vegetables for this salad can be varied according to which cooked vegetables are available.
