Savoury Custard Tart Recipe
Cooking Time: 25-30 minutes You will need for 4 servings: 1 7-in. baked pastry 3 eggs case (87) 1 oz. grated cheese
2 oz. rashers bacon salt and pepper
1 oz. butter cayenne pepper
1 small onion, finely 4 tablespoons milk chopped
1 Remove the rind from the bacon, cut into pieces and fry in the butter with the onion.
2 When the onion is just tender, mix with the egg yolks and cheese, add seasoning and milk.
3 Beat whites stiffly and fold into egg mixture.
4 Pour into the pastry case and bake in a moderate oven (350‚°F – Gas Mark 4) until the mixture is firm and lightly browned.
Eggs Lorraine
Cooking Time: 10 minutes
You will need for 4 servings: 4-6 rashers of bacon 1 oz. butter 4 oz. cheese, grated 4 eggs coarsely seasoning 1 pint thin cream or a little chopped evaporated milk parsley
1 Trim the bacon and put into a shallow fireproof dish.
2 Cover with the grated cheese and pour over the cream.
3 Dot with butter.
4 Break each egg carefully on top, sprinkle with salt and pepper and put into a moderate oven (350‚°F – Gas Mark 4), until the eggs are set.
5 Sprinkle with parsley before serving.
