Butter cayenne pepper.

1 small onion, finely 4 tablespoons milk chopped.

1 Remove the rind from the bacon, cut into pieces and fry in the butter with the onion.

2 When the onion is just tender, mix with the egg yolks and cheese, add seasoning and milk.

3 Beat whites stiffly and fold into egg mixture.

4 Pour into the pastry case and bake in a moderate oven (350‚°F – Gas Mark 4) until the mixture is firm and lightly browned.

Eggs Lorraine.

Cooking Time: 10 minutes.

You will need for 4 servings: 4-6 rashers of bacon 1 oz. Butter 4 oz. Cheese, grated 4 eggs coarsely seasoning 1 pint thin cream or a little chopped evaporated milk parsley.

1 Trim the bacon and put into a shallow fireproof dish.

2 Cover with the grated cheese and pour over the cream.

3 Dot with butter.

4 Break each egg carefully on top, sprinkle with salt and pepper and put into a moderate oven (350‚°F – Gas Mark 4), until the eggs are set.

5 Sprinkle with parsley before serving.
