Spreads, Toppings, Sauces And Gravies

Several sugar-free spreads can be made to use on scones, bread and toast (Pritikin). Toppings can be used on desserts.

1/2 roast is not complete without gravy, so 1/2 recipe has been included to accompany roasted meat. Several sauce recipes, both sweet and savoury, are also included. These are very simple and quick to make in the microwave oven.

Apple date butter.

1 cup dates, washed, pitted 2 tablespoons water.

1/2 cup canned apples, unsweetened.

Place the ingredients in 1/2 small, deep, microwave-safe dish.

Do not cover.

Microwave on high for 3 minutes Stir three times during cooking.

Allow to stand for 1/2 further 1 minute. When cooled, process the mixture, using the cutting blade, until it is smooth and resembles 1/2 paste. Place in 1/2 sterilised jar and refrigerate. Makes about 1 cup.

Boysenberiy spread.

2 cups boysenberries, washed, 2 tablespoons unsweetened apple drained juice concentrate.

Mix the boysenberries and concentrate together. Place in 1/2 small, deep, microwave-safe dish. Cover.

Microwave on high for 3 to 4 minutes Stir two times during cooking. Gently mash the mixture until it resembles 1/2 spread. Allow to stand for 1/2 further 2 minutes.

Place in 1/2 sterilised jar and refrigerate.
