Stuffed Herrings Recipe

Cooking Time: about 20 minutes You will need for 4 servings:

4 fresh herrings with squeeze garlic juice soft roe

1 tablespoon chopped parsley

1 tablespoon finely chopped onion

4 tablespoons breadcrumbs 1 hard-boiled egg salt and pepper milk

1 Prepare the fish, remove the roe and the backbone and open out the fish.

2 Mix all the other ingredients with the roe, season carefully and moisten with a little milk.

3 Spread on half the herring and cover with the other half.

4 Move carefully into a fireproof dish and bake in a moderate oven (350°F – Gas Mark 4) for about 20 minutes.

5 Serve with wedges of lemon.

Grilled herring gratinee

Cooking Time: 10-15 minutes

You will need for 4 servings:

4 fresh herrings 1 tablespoon chopped

2 tablespoons oil shallot

1 tablespoon chopped 2 tomatoes, peeled and parsley chopped

2-3 chives, chopped salt and pepper

1 Prepare the herrings and remove the roes.

2 Mix the roe with the oil, parsley, shallot, chives and tomatoes. Season and cook all together in a small pan, stirring well for about

3 minutes.

3 Grill the herrings and put into a fireproof dish. Pour the sauce over and if liked brown under the grill.
