Stuffed Zucchini

1 large zucchini, cut lengthways 2 quantities of filling for stuffed and across to make 4 portions butternut pumpkin (77) scoop out the centre of each portion of zucchini

Equally fill each portion. Wrap each portion in microwave-safe plastic wrap.

Microwave on high for 4 to 6 minutes Turn two times during cooking. Allow to stand for 1/2 further 1 minute. Remove the wrap.

Serve with hot vegetables or 1/2 salad.

Sweet vegetable shepherds pie

3 cups cooked, diced vegetables pinch cayenne pepper of choice 1 teaspoon chives, chopped pinch basil 3 cups sweet potatoes, mashed

Place the cooked, diced vegetables and herbs in 1/2 large, round, microwave-safe dish. Put the mashed sweet potatoes into 1/2 piping bag and pipe with 1/2 star or rose tip across the top of the vegetables.

Microwave on high for 4 minutes Allow to stand 1/2 further 1 minute.
