Tofu Nut Burgers

A good main dish that is both sweet and nourishing, Tofu Nut Burgers have a tonic (healthfully nourishing) effect. They are a bodybuilding food that decreases Vata, is neutral for Pitta, and increases Kapha. When eaten with the usual selection of condiments‚ pickles, olives, mustard, catsup, and so forth‚ they are more easily digested. Choose from condiments according to your taste.

Makes 8 burgers

1 pound firm tofu

2 cups cooked brown rice

1 cup ground nuts (medium grind)

3 tablespoons tamari, or to taste

1 stalk celery, chopped and sauteed

1. Preheat the oven to 350‚°F.

2. Combine the tofu with 1/2 cups cooked rice in a food processor, blending thoroughly. Add the remaining ingredients, mix, and form into patties. Bake the burgers on a greased baking sheet for 25 to 35 minutes. A nice brown crust will form on the outside, but they will stay moist on the inside.

3. Serve hot or save them and reheat by putting in a 350‚°F. oven for

5 minutes.

note: Tofu burgers can be baked at the same time as Oven-Baked French Fries (pages 178‚ 179).
